genius. Think
about it. The
varieties and combinations are
endless. Ground
meat and spices stuffed into casing. Sausage can be prepared numerous
ways, let’s talk about them.
Sausage can be classified by the type of
meat that is used. Classically sausage is made from
pork. It can also
be made from beef, chicken, duck, veal, lamb, anything that
can be cut and ground.
Sausage can also be prepared in a number
of ways.
It can be
fresh, cold smoked, hot smoked, cured, dried, and even
pickled.
Even the casing that contains the sausage
can vary.
Hog casings
are larger. Sheep casings are small.
There are even
processed synthetic casings for different
uses.
Sausage recipes and methods vary by
country and region.
At Eckerlin,
we carry both great smoked sausages and fresh sausages that are
made the artisanal way.
Each fresh
sausage is made with an old hand crank sausage stuffer in 10 lb
batches. We use natural hog and sheep casings and great
recipes that have been handed down over the
years.
